Koval was founded in Chicago in 2008 by Dr. Sonat Birnecker Hart and her husband, Dr. Robert Birnecker. The distillery was the first to open in the city since the mid-1800s. The word koval means smith or blacksmith in many Eastern languages, but in Yiddish it also means one who forges ahead. Koval pays homage to Sonats grandfather who decided to forge ahead and move to the USA and start a new life from scratch. These products are all made organically and with a grain to glass philosophy, the distillery believes in only offering high-quality, well-made spirits using state-of-the-art technology.
The unique mash bill of 51 per cent corn and 49 per cent millet offers a smooth and balanced bourbon with notes of mango chutney, vanilla, and peppery caramel. This bourbon is best enjoyed neat or on the rocks to appreciate these unique tasting notes.
