Pedro Ximenez is on old fortifying variety planted in the early part of the Barossa Valleys grape growing history. While it can produce sometimes very simple flavours when young, Tom found the old remaining plants he works with today are utterly delicious.

Pedro Ximenez is on old fortifying variety planted in the early part of the Barossa Valleys grape growing history. While it can produce sometimes very simple flavours when young, Tom found the old remaining plants he works with today are utterly delicious. The fruit works very well in making slightly oxidative styles of wine (that’s Orange Wine for those playing at home) and this is no exception. Tom thinks this wine will age beautifully but is drinking particularly delicious now especially after a day or two open.
