Field & Sound is their new Bottled in Bond label, which utilizes locally grown grains, a “sweet mash” fermentation technique, and a particularly high-rye mashbill, with 33% winter rye.Labeled a “maritime whiskey”, the flavor profile gives off hints of salinity thanks to their proximity to Long Island Sound. But the salinity is subtle, and certainly takes a back seat to big rich caramel, vanilla, and especially the spicy, herbal rye character that is the real driver here. Bottled at 50% abv without chill-filtration.
