This wine is our somewhat more layered and complex take on Margaret Rivers classic white blend. As the dominant variety, Semillon makes up 68% proportion of the blend. The focus with this wine is on picking the grapes when the vineyards canopy is in good condition and the juices natural acidity still high. A small proportion of Chardonnay (3%) brings an unapparelled degree of depth. All components have been fermented with natural yeasts and racked to new French barriques for 11 months, providing a texture and complexity to the wine, whilst still delivering a freshness on the mid palate. A complex textural wine that will age gracefully for 5+ years and will develop richness, and a subtle toasty quality with time in the bottle.
