This realization is further solidified upon tasting this particular wine, which is currently in its optimal drinking window and will remain so for the next few years. It opens up slowly, revealing a salty zest of dark cherry and the wild garriguea type of herby scrub found in Burgundy. This wine is a gastronomic delight, becoming one of my favorites when paired with a seared steak accompanied by a red wine pan jus.
