Spike’s Reserve 7 Year is crafted with care using Australian molasses, yeast, local water and a five-day fermentation period to create a rum with a unique flavour. Aged for seven years in 300-litre charred oak barrels, this rum offers a complex array of aromas, from bitter wood resin and salt, to apple cider and vanilla. Oaky sweetness dominates, with hints of caramel, toffee, stewed apples, peaches, and honey. The taste is balanced by muskier notes, culminating in a dry, tannic finish.
